These warm dumplings are very good, served with ketchup or salad, but also cold, take them with you!
To prepare the dumplings in this recipe, I cleaned the fridge and used all the meat dishes.
- For the dough:
- 2 yolks
- 200 g butter with 82% fat
- 200 ml of milk
- 500 g of flour
- 1 tablespoon vinegar
- 1 egg yolk + 1 teaspoon milk, for greasing
- cumin seeds
- Sesame seeds
- For filling:
- 1 kg of meat dishes (steak and meatballs)
- 2 small onions
- 1 carrot
- 1 parsley root
- 2 tablespoons hot pepper jam
- 3 egg whites
- 150 g mozzarella
- 1 bunch green parsley
- 1 tablespoon oil

For the dumpling dough, sift 3/4 of the amount of flour in a bowl and mix it with a little salt. We make a hole in the middle where we put: the yolks, the cold butter cut into cubes and the vinegar. Knead the dough with your fingertips, gradually adding the cold milk. We also add as much flour as we need, to get a non-sticky dough. Cover the dough with cling film and leave it to rest, in a cool place, until we prepare the filling. For the filling, clean and finely chop the vegetables, then lightly fry them in a little hot oil. We pass the meat dishes through the robot, or through the mincer and add them over the hardened vegetables. We put out the fire, because the meat dishes do not require any other heat treatment. Add the hot pepper jam, the 3 egg whites, salt, thyme and chopped parsley. Homogenize the composition well, then add the mozzarella given on the grater and mix again. Divide the dough into 8 approximately equal parts, which we shape into spheres. On the floured table, we spread each sphere one by one in a thin, round sheet. Put 2 tablespoons of the filling composition in the middle of the dough. Then fold a part of the dough over the filling, joining the edges of the dough and forming a semicircle. With a cutter or a knife, cut the excess dough from the edges. Then press with a fork passed through the flour the glued edges of the dough, so as not to fall apart during baking. We do this with all the spheres of dough. From the cutouts of the corners of the corners, I assembled 2 more corners. Place the dumplings in the tray lined with baking paper, grease them with egg yolk mixed with milk and sprinkle cumin over half of them and sesame seeds over the other half. Bake the dumplings in the preheated oven at 180 degrees for 25-30 minutes, or until the dough is well browned. We serve them either warm, with ketchup, with salad, or with various sauces, but they are delicious and cold, packaged.
